Coconutty pancakes

Coconutty pancakes

I bought some coconut flour a little while ago from my local health food shop, and whilst browsing some sites for recipe inspiration I found a recipie using coconut flour in pancakes.

So i gave it a go this morning and it worked! turned our perfectly and delicious! :)


What you'll need:
4 Egg Whites
2 tbsp Coconut Flour
(optional to add some stevia or nativa or even 1/2banana for some sweetness)
coconut oil
Topping ideas: 
Banana, Chopped
Dash Cinnamon
2 tbsp Honey (substituted for syrup)
Greek yogurt
shredded coconut


What to do: 
Preheat a nonstick pan with a little coconut oil to medium heat. Mix all ingredients well (i found using a small blender worked well) You can use a blender u added banana and, otherwise mixing by hand will work too. Put the mixture in the pan and cook like a pancake. The mixture will be quite thick.


Once it has been cooking for a few minutes flip over and cook on the other side for another minute or so until its golden brown and cooked.


Flip out onto a place and serve with your desired topping. I used chopped banana, greek yogurt (Chobani) and shredded coconut.

The pancake has only 208 calories! (not including toppings)


Another variation on this pancake...

I added 1/2 a teaspoon of coconut essence and 2-3 drops of liquid stevia to my mix and cooked it up, served with finely chopped green apple, yogurt and shredded coconut....
