Turkey Muffins
I bought turkey mince yesterday, I would usually make meatballs or pasta sauce with it, but i was thinking about going for something different, while scrolling through some of my fav recipie blogs i came acress turkey muffins and thought it would be simple enough.
I pretty much made up my own recipe as i went and they tasted delish!
What you'll need:
500gms turkey mince
1 onion
2 cloves of crushed garlic
2 large red chili (i like it spicy, but u can use 1 or none)
1 egg
2 tablespoons of almond meal
bunch of basil and chives chopped (stole from my parents veggie garden!) but u can u pretty much whatever herbs u want, parsely, mint, coriander, etc...
pepper
Spices: coriander powder, paprika, tough or chili powder, cummin
What to do:
Pre-heat the oven to 180 Degrees Celsius, place the onion, garlic and chili in a food processor and blend to make a wet paste, then into a large bowl add the mince and the onion, chili, garlic paste, add the herbs, egg, almond meal, spices, pepper and mix with a spoon until its all combined.
Grease some muffin pans with a little olive oil on some paper towel (this mix makaes 9-10 muffins depending on how big or small you want them) then spoon the mixture onto the pans. They shrink a bit when cooking. Then place in the oven for 30 mins until they are golden brown on the top.
Once they look cooked, take them out and let them cool for a couple of minutes before cutting around the edges with a knife and popping them out.
I served mine with steamed broccoli and snow peas and a spoon of cottage cheese.
