Apple scrambled egg

Apple scrambled egg

Ok... so i know what you're probably thinking, egg whites and apple... gross! but trust me, its actually pretty good, surprised me too!

What you'll need: (serves one)
1/2 cup egg whites or 3 egg whites
1 green apple diced
1 tablespoon of flax seed meal
3/4 cup of greek yogurt
Cacao nibs (optional, u can use chocolate chips too)
shredded coconut
cinnamon
coconut oil
*optional P2B (powdered peanut butter, or u can use natural peanut butter, but add a little water to it to make like a sauce

What to do:
Heat up a small non stick frying pan with a small amount of coconut oil, add the diced apple to let it start to soften. Blend the egg whites, cinnamon and flax seed until it starts to go frothy and thickens, then pour over the apples. Allow the egg whites to start to cook, once it starts to go white, start moving the mixture about the pan like you would when making normal scrambled eggs. Once the egg whiles are all cooked, put the apple and eggs into a bowl, top it with greek yogurt, shredded coconut, cacao nibs, and runny peanut butter.
Really easy and quick breakfast.... plus it tastes yummy! :)

Raspberry Smoothie

What you'll need: (serves one)
1 zucchini raw, diced
handful of raspberries or any berries u like (i used frozen raspberries)
1 serve of protein powder (i used a vanilla one, but chocolate would be delicious too!)
2-3 drops of liquid stevia ( i used a vanilla floavoured one)
handful of ice
water
and some shredded coconut to serve

What to do:
 Combine all the ingredients in a blender and mix away! once ur happy with the consistency (you may need to add more water depending) pour into a cup and enjoy! i like to drink mine with a straw and a spoon!  :p

I promise you that you wont even be able to tell there's zucchini in it! tastes delicious and creamy and berrylicious! :p hehe



mmm... so refreshing after a hard gym session! :)

Strawberry Jam and Flax Pancakes

Strawberry Jam and Flax Pancakes

Seriously the best breakfast I've EVER made!! EVER!! :)

Strawberry Jam:
1 -2 punnets of strawberries
2-3 tablespoons of chia seeds (depends on how thick you want it)
1 tablespoon of water
Optional: 1-2 drops of liquid stevia or nativa (to sweeten, i didn't add any to mine, i found the strawberries sweet enough)

What to do:
Chop the strawberries into small pieces, place in a saucepan with he water, leave to cook for about 30mins, until all the pieces have really softened and the mixture has gone thick.Take off the head and allow for it to cool, once cooled slightly add the chia seeds and stir thoroughly.
Pour the jam into air tight containers and place in the fridge, after a few hours the jam will have become thick and delicious.... its just that easy! and you can do that with pretty much any fruit that's in season! :)


 

Now.... the Pancake!

What you'll need: (serves one)
1/2 cup of egg whites (i used the ones in the carton, found in the milk section)
2 tablespoons of flaxseed meal
Optional: 1-2 drops of liquid stevia or nativa (to sweeten)
coconut oil for cooking

What to do:
Preheat a nonstick pan with a little coconut oil to medium heat. Mix the egg whites, flax-seed meal and the sweetener with a stick blender or by hand if you don't have a blender of some kind, until the mixture is a bit frothy and thick (the flax-seed meal will thicken up quickly), then pour into a pan and leave to cook for about 3-4 minutes each side or until its cooked and golden.
Then take off the heat and serve with the strawberry jam, greek yogurt, and of course a little peanut butter! :p ...... seriously the best breakfast ive ever had!

Meat and veggie balls

Meat and veggie balls

What you'll need:
500gms minced meat (i used beef but u can use chicken or pork)
1 carrot shredded/grated
1 zucchini shredded/grated
bunch of parsley chopped
1 egg
1/2 tsp of cumin
1 red onion finely chopped
2 cloves of garlic crushed


What to do:
Pre heat the oven to 180degrees and line a baking tray or 2.
In a large bowl add the mince, onion, garlic, egg, parsley, spices and egg and set aside.
With the carrot and zucchini you will need to squeeze the moisture out, so using a clean tea towel place the grated veggies in the middle and grab the corners of the towel and wring the veggies out, u will notice a fair bit of liquid comes out as these are juicy vegetables.
When u cant get much more liquid out, add to the bowl of mince. Mix thoroughly (i used my hands) until its all well combined. then roll into little balls, u can make them however big or small you like, place on the baking trays and pop in the oven for about 20 -25mins.
Take out once they're golden brown.
 




 I served mine with some zucchini spaghetti and kale and broccoli :)

Best muesli ever...

Best Muesli Ever...
 
Have you ever thought of a muesli without grains, oats etc... you must try this recipe out! its my new take on the old fashioned muesli, its fresh and delicious and really quick to make! :)

What you'll need:
1 green apple chopped roughly
4 strawberries chopped roughly
1 tablespoon of flaxseed meal
1 teaspoon of cacao nibs
shredded coconut

What to do:
In a food processor or blender cambine all the ingriediests until they are all chopped and mixed together. Be careful tro not over blend so it becomes like a paste. once combined take mixture out and serve with some greek yogurt.... delish!

p.s. you could substitute the apple and strawberries with any fruit u like, and u can add nuts and seeds, pretty much what ever you fancy! .... enjoy! :)

I mixed the yogurt into my muesli, so creamy and delicious! :p

Baked sweet potatoes

Baked Sweet Potatoes

For the long weekend i invited my parents and brother over for dinner and i cooked up a smashing meal! I pretty much made up my recipie for my baked sweet potatoes as i went, threw in a bit of this and a bit of that and they turned out pretty darn good! so i thought i would share :)

What you'll need:
1-2 large sweet potaotes (depending on how many people you are serving, i used one really large potato for 5 people)
half a cauliflower
4 cloves of garlic, crushed
2 teaspoons ground coriander
2 teaspoons ground cummin
2 teaspoons onion powder
2 teaspoons of smokey paprika
salt and pepper
2 tablespoons of olive oil (EVO is best)


What to do:
 Pre- heat the oven to 180. I used a  mandolin to cut my potatoes thinly but if u don't have one, u can just use a knife to cut thin slices, roughly chop the cauliflower and add both veggies to a large baking tray. Add all of the spices and garlic and olive oil and toss through, making sure each piece if coated. Bake for about 30 - 45 mins tossing the veggies around every 10mins of so. Take out once they are golden and cooked.

i served mine with baked salmon and broccolini, it was delicious! :)

Spinach dip

What you'll need:
1 cup of cottage cheese
1 tablespoon of tahini paste
2 handfuls of baby spinach
1/4 or a red onion
squeeze of lemon juice
1/2 teaspoon of  ground coriander, cumin and smoked paprika
salt and pepper to taste

assortment of dipping ingredients, i used carrot, celery and red capsicum :)

What to do:
Using a blender (i used a stick blender) combine all of the ingredients and blend away! Its as easy as that! A great idea to take to a party or BBQ, everyone will love it! xx




Banana Scramble

What you'll need: 
1/2 cup of egg whites
1 banana
2tablespoons of P2B (powdered peanut butter) or natural peanut butter
1 tsp chia bran or chia seeds
2 tablespoons coconut chips or shredded
1 tsp cacao nibs
3/4 cup of greek yogurt
coconut oil


What to do:
Heat up a non-stick pan with a little coconut oil. Using a blender, combine the banana and egg whites and blend until smooth and the egg whites have started to whip up. Pour the mixture into the pan and let if cook for a few minutes, then flip, you may be able to flip the mixture in one piece like a pancake, (which is what i tried to do) but if it doesnt flip in one go, then flip what you can and cook like scrambled eggs.
Once cooked, put it in a bowl and cover with peanut butter, yogurt, chia, cacao and coconut and enjoy! :)

Chocolate chip pancakes

At the moment i am starting to obsess over cacao nibs! im putting them in everything, but its ok becasue they are one of natures superfoods, which makes me feel better eating so many!
So the past few mornings i have been trying to create recipes on how to incorporate them into my breakfast, and i have come up with 2 AMAZING pancake recipes that will make your tummy and taste buds feel happy! :)

Pancake no.1 - Chocolate chip banana pancake


What you'll need:
4 Egg Whites
2 tbsp Coconut Flour
1/2 ripe banana
1tsp of cacao nibs
coconut oil
Greek yogurt, shredded coconut (to serve)

What to do: 
Preheat a nonstick pan with a little coconut oil to medium heat. Mix the egg whites, coconut flour and banana until will combines (i found using a stick blender worked well, but u can mix by hand too) Add the cacao nibs and stir through with a spoon. Pour the mixture in the pan and cook like a pancake. The mixture will be quite thick, so u will need to spread it out and make a pancake shape.
Once it has been cooking for a few minutes flip over and cook on the other side for another minute or so until its golden brown and cooked.
Serve with few spoons of yougut, the other half of the banana and some shredded coconut....  :)





Pancake no. 2 -  Blueberry and chocolate chip

What you'll need:
3 Egg Whites
2 tbsp Coconut Flour
1/2 cup of blueberries (i used frozen, but fresh will work too)
1tsp of cacao nibs
coconut oil
1 scoop of cookies and cream protein powder (u can use whatever protein powder you like)
extra blueberries for serving


What to do: (similar method as the first pancake)
Preheat a nonstick pan with a little coconut oil to medium heat. Mix the egg whites and coconut flour until will combined (i found using a stick blender worked well, but u can mix by hand too) Add the cacao nibs and blueberries stir through with a spoon. Pour the mixture in the pan and cook like a pancake. The mixture will be quite thick, so u will need to spread it out and make a pancake shape.
Once it has been cooking for a few minutes flip over and cook on the other side for another minute or so until its golden brown and cooked.
Mix the protein powder with a small amount of water to make a paste like sauce and pour over the top of the pancake and add the extra blueberries....



 I have to say.... that out of all the pancakes that i have made, these are definatly my favourite! very scrumptious!!  Hope you enjoy :)

Cookie Dough protein balls

Cookie dough protein balls

What you'll need:
1/2 cup almond meal
3  scoops of cookies and cream  protein powder (I'm using Optimum Nutrition Gold standard Whey)
2 teaspoons of Cacao nibs
2 tablespoons of natural smooth peanut butter (can use crunchy)
1/2 teaspoons of coconut oil 
2 teaspoons of Nativa (or alternate sweetener)
hot water
shredded coconut (for rolling in after)

What to do: 
First of all in a medium sided bowl add all the dry ingredients and mix until its all well combined. Then add the peanut butter and coconut oil. Gradually add the hot water (using hot water will help to melt the coconut oil and peanut butter making it easier to combine) You want the mixture to be similar to cookie dough. Then once its all combined, scoop out same sized amounts and roll into balls, then roll in the coconut to coat the outside.
place in the refrigerator for at least 1 hour to allow them to firm up.
 
 Absolutely delicious! even my bf took some to work and they were a massive hit!

HAPPY MOTHER'S DAY!!!
So its mothers day today, I'm having my mum and dad over for morning tea, and what a more perfect way to spend the morning than to have cups of tea and banana bread, especially when this recipe is the best banana bread ever!!

I was skeptical at first, but this recipe turned out moist and tasty, and even though there's no sugar in the mix, it was deliciously sweet :)  

What you'll need: (makes one loaf) 
4 really ripe bananas, mashed
1/3 cup coconut oil (plus a little extra to grease the baking tin)
4 free-range eggs
1tsp vanilla
1 ½ tsp cinnamon
½ cup coconut flour (will only work with coconut flour, no substitutions)
1 heaping tsp baking soda (bi-carb soda)
¼ tsp salt
1/2 cup of cacao nibs (or chocolate chips)
1/2 cup of shredded coconut (optional)

You can also add nuts or seeds or dried cranberries for something different... 

What to do:
Preheat the oven to 180 degrees Celsius. Combine all the ingredients into a medium sized bowl and mix until combined (the mixture will be slightly gooey to start with, but will quickly turn stiff and thick, so don't worry!)  Pour the mix into a lightly greased bread pan (I used coconut oil and baking paper, but you can use butter too) and bake for about 30- 45 minutes or until center is set and top is golden.(Mine only cooked for 30mins and it was ready), allow it to slightly cool before taking it out of the tin. Best served warm... Enjoy!

The mixture is really thick, i was a bit worried on how it would turn out, but it worked!
Fresh out of the oven, filled the house with a delicious smell..mmmm

I used a bit of Loving Earth Cacao Coconut butter....heaven!!!  :)

Vanilla Chia Balls

Vanilla Chia Balls

What you'll need:
1 cup of almond meal
1-2 teaspoons of Nativa (or stevia sweetner if you like)
1/2 cup of vanilla protein powder (I used Teresa Cutter's WPI)
2 spoons of chia bran (or chia seeds)
2 heaped tablespoons of natural peanut butter
1 teaspoon of coconut oil
2 table spoons of hot water
1/2 cup of shredded coconut (for rolling in at the end)

What to do:
In a bowl combine all of the dry ingredients - almond meal, Nativa, protein powder, chia bran and mix until all combined. Then add the peanut butter and coconut oil and hot water. Gradually add the water and stir as you go, (using hot water helps soften the oil and peanut butter making it easier to mix) If you add too much water the mixture can go sticky and too wet, in this case add some more chia bran or almond meal. Once happy with the consistency, take teaspoon sized amounts and roll into balls, then into the coconut.


(you wont be able to stop at one!)


Store in an air tight container in the fridge...


There are a heaps of reasons to eat chia:
1. Chia is gluten free
2. It is super high in dietary fibre, making it great for digestion and healing digestion issues.
3. It contains 20% Omega 3 ALA, making it a super food for the brain and heart. Chia has eight times more Omega 3 than salmon!
4. It boasts 20% protein
5. The protein is a complete protein with all 8 essential amino acids
6. It is high in antioxidants (It has a four times higher ORAC value than blueberries)
7. Chia contains five times more calcium than milk
8. Chia contains seven times more vitamin C than oranges
9. It contains three times more iron than spinach
10. It contains twice the potassium content of banana
11. It is food for healthy skin, hair and nails
12. It has a positive impact balancing blood glucose levels (making it awesome for diabetics)
13. Chia makes a great egg replacement. Just combine with water to form a gel, and add it to recipes that call for egg.

How much should we eat?

Nutritionists recommend that 15g/0.53oz (one tablespoon) of chia is consumed each day. Be sure to drink plenty of water as chia is very high in fiber.

Garlic Tahini dressing

What you'll need: 
1 heaped tablespoon of unhulled tahini paste
2 spoons of greek yogurt
juice of half a lemon
1-2 garlic cloves (i use 2, looove garlic!)
1/2 teaspoon of ground corriander and cumin
salt and peper to taste


What to do:
combine all ingredients together until well combined, you may need to add a dash of water depending on your desired thikness or use.

I mixed it through some steamed veggies for a quick and delicious dinner! :)

Zucchini pesto

Zucchini Pesto

I loooove pesto sauce!! most of the recipies have parmesan cheese, basil, olive oil etc... but have you tried zucchini pesto?? I have to tell you its pretty darn good! and veagan friendly too!

What you'll need: (sauce serves 2) ( i used it for two meals)
2 small zucchini or one large cut in small chunks
2 cups fresh basil
2 cloves garlic
2 tablespoons tahini paste (found in the health food section at Woolworths)
1/2 teaspoon salt, or to taste
 
What to do:
Steam the zucchini chunks over boiling water for about 3 minutes, or until just soft when you poke it with a fork (i had mine a little firmer, i like my zucchini that way). Then place the zucchini, garlic, tahini, basil and salt in a food processor/blender and process until finely chopped and smooth.

The end product :)

I served it one night with grilled spiced chicken and steamed veggies... Delicious!!



The second night i made a tofu and veggie stir fry and mixed the pesto sauce in, heaven!!
You really must try this recipe :)

Stuffed Veggie Mushies

Stuffed Veggie Mushies

So its a Sunday night and i feel like something filling and comforting, plus i was at the supermarket earlier today and found this GIANT mushroom! it was massive! so i had to buy it :)

This is my recipe....
What you'll need:
1 large mushroom, or u can use smaller ones (whatever is available to you)
1 cup of broccoli florets, roughly chopped
1/2 - 3/4 grated zucchini
1/2 red onion diced finely
1 carrot sliced finely
1/4 cup of almond meal
1tsp of sunflower seeds
1 egg white
1/4 tsp of cumin, ground coriander, paprika

What to do:
Pre heat the oven to 180degrees and heat up the grill. Place the mushroom under the grill for about 3-5mins until it softens slightly. Then, in a microwave safe dish, add the broccoli, carrot and onion and for about 1min30secs - 2mins, or until the veggies are slightly softened. Then in a medium sized bowl add the veggies, spices, egg white and stir through until well combine. Grab a lined baking tray and place the mushroom in the middle, then simple add the veggie filling, makiing sure you pack and complress as much as you can fit!



Then sprinkle the almond meal and sunflower seeds over the top and place in the oven for about 15-20mins. You only really need to wait for the almond meal to start to go golden and the mushroom to soften.


Then serve! so filling and delicious!! :)

Clean Chicken Schnitz


What you'll need: (serves 2)
2 skinless chicken breasts cut in half (or you can keep them whole, it cooks quicker if they are in smaller pieces)
1/2 cup almond meal
assorted spices: garlic granules, smoked paprika, ground coriander, pepper, cumin
2 egg whites
lemon wedge (for serving)

What to do:
pre-heat your oven to 180degrees. In a bowl combine the almond meal and spices and mix until combined. Then in a separate bowl add the egg whites. Dip the chicken in the egg whites first and allow for any extra egg to drip off, then coat in the alomond meal before placing on a baking tray.
(I used a cake cooling rack over a baking tray to get a crispy coat all around the chicken).
Then allow to cook in the oven for about 20-25 mins depending on the size of the chicken pieces. Once they have turned a golden brown colour, remove and serve with your favorite sides...


I served mine with some steamed green veggies :)
