Chocolate chip pancakes

At the moment i am starting to obsess over cacao nibs! im putting them in everything, but its ok becasue they are one of natures superfoods, which makes me feel better eating so many!
So the past few mornings i have been trying to create recipes on how to incorporate them into my breakfast, and i have come up with 2 AMAZING pancake recipes that will make your tummy and taste buds feel happy! :)

Pancake no.1 - Chocolate chip banana pancake


What you'll need:
4 Egg Whites
2 tbsp Coconut Flour
1/2 ripe banana
1tsp of cacao nibs
coconut oil
Greek yogurt, shredded coconut (to serve)

What to do: 
Preheat a nonstick pan with a little coconut oil to medium heat. Mix the egg whites, coconut flour and banana until will combines (i found using a stick blender worked well, but u can mix by hand too) Add the cacao nibs and stir through with a spoon. Pour the mixture in the pan and cook like a pancake. The mixture will be quite thick, so u will need to spread it out and make a pancake shape.
Once it has been cooking for a few minutes flip over and cook on the other side for another minute or so until its golden brown and cooked.
Serve with few spoons of yougut, the other half of the banana and some shredded coconut....  :)





Pancake no. 2 -  Blueberry and chocolate chip

What you'll need:
3 Egg Whites
2 tbsp Coconut Flour
1/2 cup of blueberries (i used frozen, but fresh will work too)
1tsp of cacao nibs
coconut oil
1 scoop of cookies and cream protein powder (u can use whatever protein powder you like)
extra blueberries for serving


What to do: (similar method as the first pancake)
Preheat a nonstick pan with a little coconut oil to medium heat. Mix the egg whites and coconut flour until will combined (i found using a stick blender worked well, but u can mix by hand too) Add the cacao nibs and blueberries stir through with a spoon. Pour the mixture in the pan and cook like a pancake. The mixture will be quite thick, so u will need to spread it out and make a pancake shape.
Once it has been cooking for a few minutes flip over and cook on the other side for another minute or so until its golden brown and cooked.
Mix the protein powder with a small amount of water to make a paste like sauce and pour over the top of the pancake and add the extra blueberries....



 I have to say.... that out of all the pancakes that i have made, these are definatly my favourite! very scrumptious!!  Hope you enjoy :)

Cookie Dough protein balls

Cookie dough protein balls

What you'll need:
1/2 cup almond meal
3  scoops of cookies and cream  protein powder (I'm using Optimum Nutrition Gold standard Whey)
2 teaspoons of Cacao nibs
2 tablespoons of natural smooth peanut butter (can use crunchy)
1/2 teaspoons of coconut oil 
2 teaspoons of Nativa (or alternate sweetener)
hot water
shredded coconut (for rolling in after)

What to do: 
First of all in a medium sided bowl add all the dry ingredients and mix until its all well combined. Then add the peanut butter and coconut oil. Gradually add the hot water (using hot water will help to melt the coconut oil and peanut butter making it easier to combine) You want the mixture to be similar to cookie dough. Then once its all combined, scoop out same sized amounts and roll into balls, then roll in the coconut to coat the outside.
place in the refrigerator for at least 1 hour to allow them to firm up.
 
 Absolutely delicious! even my bf took some to work and they were a massive hit!

HAPPY MOTHER'S DAY!!!
So its mothers day today, I'm having my mum and dad over for morning tea, and what a more perfect way to spend the morning than to have cups of tea and banana bread, especially when this recipe is the best banana bread ever!!

I was skeptical at first, but this recipe turned out moist and tasty, and even though there's no sugar in the mix, it was deliciously sweet :)  

What you'll need: (makes one loaf) 
4 really ripe bananas, mashed
1/3 cup coconut oil (plus a little extra to grease the baking tin)
4 free-range eggs
1tsp vanilla
1 ½ tsp cinnamon
½ cup coconut flour (will only work with coconut flour, no substitutions)
1 heaping tsp baking soda (bi-carb soda)
¼ tsp salt
1/2 cup of cacao nibs (or chocolate chips)
1/2 cup of shredded coconut (optional)

You can also add nuts or seeds or dried cranberries for something different... 

What to do:
Preheat the oven to 180 degrees Celsius. Combine all the ingredients into a medium sized bowl and mix until combined (the mixture will be slightly gooey to start with, but will quickly turn stiff and thick, so don't worry!)  Pour the mix into a lightly greased bread pan (I used coconut oil and baking paper, but you can use butter too) and bake for about 30- 45 minutes or until center is set and top is golden.(Mine only cooked for 30mins and it was ready), allow it to slightly cool before taking it out of the tin. Best served warm... Enjoy!

The mixture is really thick, i was a bit worried on how it would turn out, but it worked!
Fresh out of the oven, filled the house with a delicious smell..mmmm

I used a bit of Loving Earth Cacao Coconut butter....heaven!!!  :)
